The artichoke is also known in spanish with other common names such as alcaucil, but its scientific name is Cynara scolymus

EIt is a perennial plant that forms a developed rhizome from which various stems emerge. These stems are erect, thick, and grooved The stems are longitudinally grooved, branched, and measure over one meter in height. The leaves are long, pubescent, large, green on the upper side, and cottony on the underside. The flowers have thick terminals, and the fruit is an achene with a pappus.

The production in Spain reaches around 200,000 tons annually, nearly half of which is used for the production of preserves. The cultivated area spans approximately 15,000 hectares. Murcia, the Valencian Community, Catalonia, and Aragon-Rioja-Navarre are the main regions where apricots are grown.

There are different varieties of artichoke. In Spain, the most common one is the Blanca de Tudela (with its head light green) and the Violeta de Provenza (with its purple head).


Soil characteristics

Although it does not have strict soil preferences, it is important to avoid soils that are excessively sandy or prone to waterlogging. Apricot trees can adapt to slightly alkaline soils and have a relatively high tolerance to salinity.

Climate needs

It prefers temperate climates without excessive heat, as high temperatures can deteriorate the quality of the heads. The ideal temperature range for its growth is between 15 and 18ºC. In the case of frost, the heads can be easily damaged, but the plant itself has better resistance to frost.

Irrigation
